Carrots should be eaten on occassions other than in a carrot cake.
Carrots contain:
🥕Vitamin A in the form of Beta carotene for eye health
🥕Carotenoids lutein and zeaxanthin that serve as antioxidants
🥕Potassium which helps to maintain healthy blood pressure
🥕Vitamins B6, C, K
🥕Fiber which lowers risk of cardiovascular disease and reduces "bad" cholesterol
Some of my favorite ways to enjoy carrots are:
🥕As a crunchy raw snack with dip or hummus
🥕Juicing carrots with apple, ginger, and a golden beet
🥕Sauteed carrots with shredded cabbage and broccoli
🥕Carrot ginger soup
🥕Carrot salad or tossed in a leafy green salad with roasted beets
🥕Roasted carrots and red onions
🥕Coleslaw with lots of shredded carrots - with walnuts and raisins in a spicy sauce
