Veggie Curry Taquitos

An assortment of vegetables with a little curry kick rolled into a crunchy wrap. Delicious!



Veggie Curry Taquitos


Ingredients:

· Carrots (sliced)

· Organic Yellow Potatoes (diced)

· Onions (chopped)

· Broccoli florets (frozen)

· Mixed peppers (frozen)

· Green peas (frozen)

· Almond wrap

· Yellow Curry Paste


Instructions

· Cook vegetables in small amount of water until almost tender.

· Sauté all ingredients in yellow curry paste and small amount of coconut oil.

· Use minimal seasonings to taste (Ex: adobo, curry, cumin, smoked paprika)

· Place filling in wrap and fold closed.

· Bake at 425 until wrap is golden brown and crispy.
